  蛋糕

  鸡蛋 4个 / 低筋面粉 65g

  玉米油 40g / 牛奶 50g

  糖粉 30g(蛋白)+10g(蛋黄)

  玉米淀粉 10克 / 香草精 几滴

  Q弹表皮

  玉米淀粉10g / 糯米粉 50g

  粘米粉 10g / 糖粉 12g / 水 65g

  内馅

  淡奶油 65g / 草莓酱 20g / 草莓 适量

  1、先做蛋糕部分:蛋白蛋黄分离,蛋白放入干净的盆中,备用。蛋黄中加入10g糖粉,香草精,玉米油和牛奶,用手动打蛋器搅拌均匀

  2、筛入玉米淀粉,低筋面粉,搅拌均匀,蛋黄糊就做好啦

  3、备用的蛋白拿出来,高速打发蛋白至粗性发泡时,加入10g糖粉,继续高速打发。打发至细腻,但是蛋白挂不上打蛋器时,再加入10g,继续打发。

  4、舀入1/3的蛋白霜到蛋黄糊中,翻拌均匀

  5、倒回剩余的蛋白霜中,翻拌均匀

  6、烤盘垫上油纸,均匀倒入

  7、放入烤箱,上下火180度中层,9分钟后,上火转至150度,接着烤5分钟,蛋糕就做好啦

  8、做Q弹表皮部分:烤蛋糕的时候,另起碗,倒入糯米粉,粘米粉,糖粉混合均匀,加入55g水搅拌均匀,再根据实际情况加入剩余的10g水。

  9、用手揉捻,拍打面团2分钟,盖上保鲜膜,边上留个缝儿,放入微波炉叮1分钟,取出后用刮刀搅拌均匀

  10、取出面团,粘板上撒上适量玉米淀粉,用擀面杖擀成长方形状的薄片

  11、用刮刀在最左侧/右侧依次放上淡奶油,草莓酱,蛋糕条,草莓,蛋糕条

  12、两头收紧,收口朝下,从左边往右边卷起来

  13、放进冰箱冷冻30分钟,切开后,室温下放至柔软就可以开吃~
